Ingredients
  

For the filling
  • 12 pieces cannelloni tubes
  • 2 cups cooked chicken, shredded Can use leftover rotisserie chicken.
  • 1 cup ricotta cheese Can be replaced with cottage cheese for a lighter option.
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 piece egg
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For assembly
  • 2 cups marinara sauce

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella, half of the Parmesan, egg, dried oregano, salt, and pepper. Mix until well combined.
Assembly
  1. Using a teaspoon or piping bag, gently fill each cannelloni tube with the chicken mixture. Be careful not to overfill.
  2. Spread half of the marinara sauce on the bottom of a 9x13-inch baking dish. Place the filled cannelloni tubes in a single layer over the sauce.
  3. Pour the remaining marinara sauce over the cannelloni, ensuring they are well coated.
  4. Sprinkle the remaining mozzarella and Parmesan cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake for 20-25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is golden and bubbly.
  2. Let it sit for about 5 minutes before serving. Garnish with fresh basil.

Notes

You can substitute chicken with shredded turkey or vegetables for a vegetarian option. Ensure chicken is cooked beforehand. Avoid overfilling the cannelloni.
