  • 1 pound shrimp, peeled and deveined Select fresh shrimp for best flavor.
  • 8 ounces pasta (spaghetti or linguine) Pasta should be cooked al dente.
  • 4 tablespoons butter Divided into two portions.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes Adjust to taste.
  • Salt and pepper, to taste
  • Juice of 1 lemon lemon
  • 1/4 cup fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Toss in the shrimp, seasoning with salt and pepper. Cook for about 3-4 minutes, flipping halfway through until the shrimp are pink and opaque.
  4. Pour in the lemon juice and stir in the remaining butter until melted. Add the cooked pasta and mix well, using the reserved pasta water to loosen the sauce if needed.
  5. Toss in the chopped parsley, and give everything one last gentle stir. Taste and adjust seasoning as necessary. Plate up, and enjoy your delicious Shrimp Scampi!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. For freezing, cool completely and transfer to a freezer-safe container, where it can last for about 2 months. Reheat on the stove over low heat, adding a splash of water or lemon juice to revive the sauce's consistency.
