Ingredients
  

For the Shrimp Burgers
  • 1 pound raw shrimp, peeled and deveined Fresh shrimp is best for flavor.
  • 1/2 cup breadcrumbs (preferably whole grain) Can substitute with gluten-free breadcrumbs if needed.
  • 1/4 cup finely chopped cilantro
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • to taste Salt and pepper
  • 1 tablespoon lime juice Freshly squeezed lime juice enhances flavor.
For the Guacamole
  • 2 ripe avocados
  • 1 small onion, finely chopped
  • 1 medium tomato, diced
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • to taste Salt

Method
 

Preparation
  1. In a food processor, pulse the shrimp until finely chopped but not pureed, retaining some texture.
  2. In a bowl, combine the chopped shrimp, breadcrumbs, cilantro, garlic, cumin, lime juice, salt, and pepper. Mix well until everything is incorporated.
  3. Shape the mixture into burger-sized patties, about 3 inches wide, yielding about 4-6 patties.
Cooking
  1. Heat a tablespoon of olive oil in a skillet over medium heat.
  2. Cook the shrimp patties for about 3-4 minutes on each side, or until they are golden and cooked through.
Making the Guacamole
  1. While your patties are cooking, mash the avocados in a bowl.
  2. Add the onions, tomatoes, cilantro, lime juice, and salt, and mix until well-combined.
Serving
  1. Serve the shrimp burgers on buns topped generously with guacamole. Optional toppings can include lettuce or slices of tomato.

Notes

For leftovers, store shrimp patties and guacamole separately in airtight containers. Shrimp patties last 2-3 days; guacamole is best consumed within 1-2 days.
