Preparation
- Begin by preparing the shrimp, asparagus, and mushrooms. Make sure the shrimp is peeled and deveined, and the vegetables are washed and cut.
Cooking
- In a large skillet or wok, heat the olive oil or sesame oil over medium-high heat.
- Add the minced garlic and ginger to the hot oil. Stir-fry for 30 seconds or until fragrant.
- Toss in the shrimp, then season with salt and pepper. Cook for 2-3 minutes until they turn pink and are cooked through.
- Next, add the asparagus and mushrooms to the pan. Stir-fry for an additional 3-5 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce or teriyaki sauce and stir well to coat all ingredients.
- Cook for another minute, allowing everything to blend together. Taste and adjust seasoning if necessary.
- Transfer to a serving plate and sprinkle with sesame seeds if desired.
Notes
Ensure you don’t overcook the shrimp; they should be just pink and opaque. Feel free to swap out asparagus for other veggies like bell peppers or snap peas. For a bit of heat, consider adding red pepper flakes or sriracha.
