  • 1 inch piece ginger, minced
  • 3 tablespoons soy sauce or teriyaki sauce

Preparation
  1. Begin by preparing the shrimp, asparagus, and mushrooms. Make sure the shrimp is peeled and deveined, and the vegetables are washed and cut.
Cooking
  1. In a large skillet or wok, heat the olive oil or sesame oil over medium-high heat.
  2. Add the minced garlic and ginger to the hot oil. Stir-fry for 30 seconds or until fragrant.
  3. Toss in the shrimp, then season with salt and pepper. Cook for 2-3 minutes until they turn pink and are cooked through.
  4. Next, add the asparagus and mushrooms to the pan. Stir-fry for an additional 3-5 minutes until the vegetables are tender-crisp.
  5. Pour in the soy sauce or teriyaki sauce and stir well to coat all ingredients.
  6. Cook for another minute, allowing everything to blend together. Taste and adjust seasoning if necessary.
  7. Transfer to a serving plate and sprinkle with sesame seeds if desired.

Notes

Ensure you don’t overcook the shrimp; they should be just pink and opaque. Feel free to swap out asparagus for other veggies like bell peppers or snap peas. For a bit of heat, consider adding red pepper flakes or sriracha.
