- In a large mixing bowl, combine the all-purpose flour, semolina flour, and salt.
- Gradually stir in the melted butter and water until the mixture forms a dough.

Making the Filling
- In a separate bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and lemon zest.
- Mix until smooth and creamy, then set aside.
Shaping the Pastries
- Once the dough has rested, preheat your oven to 375°F (190°C).
- Roll out the dough on a floured surface until it's thin, about 1/8 inch thick.
- With a pastry cutter or a round object, cut circles about 4 inches in diameter.
- Place about a tablespoon of filling in the center of each circle, fold over, and pinch to seal.

- Arrange the sealed pastries on a lined baking tray.
