Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1/4 cup semolina flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup water
For the Filling
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 egg for egg wash

Method
 

Preparation
  1. In a large mixing bowl, combine the all-purpose flour, semolina flour, and salt.
  2. Gradually stir in the melted butter and water until the mixture forms a dough.
  3. Knead the dough for about 5-7 minutes until it's smooth and elastic.
  4. Wrap it in plastic wrap and let it rest for at least 30 minutes.
Making the Filling
  1. In a separate bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and lemon zest.
  2. Mix until smooth and creamy, then set aside.
Shaping the Pastries
  1. Once the dough has rested, preheat your oven to 375°F (190°C).
  2. Roll out the dough on a floured surface until it's thin, about 1/8 inch thick.
  3. With a pastry cutter or a round object, cut circles about 4 inches in diameter.
  4. Place about a tablespoon of filling in the center of each circle, fold over, and pinch to seal.
Baking the Pastries
  1. Arrange the sealed pastries on a lined baking tray.
  2. Brush the tops with the egg wash to give them a beautiful golden color.
  3. Bake for about 25-30 minutes, or until they are golden brown and crispy.
  4. Let them cool slightly before serving.

Notes

For a shortcut, pre-made puff pastry can be used as a dough substitute. Consider adding cardamom or other citrus zests for unique flavors. Ensure the edges are pinched securely to prevent leakage during baking.
