  • 1 cup sour cream
  • 1 medium avocado, diced
  • 4 large flour tortillas
  • 1 cup chopped lettuce For serving

Preparation
  1. Gather all your ingredients on the counter.
  2. Ensure your shredded chicken is cooked and at room temperature for easier assembly.
  3. Pre-cook your rice if you haven’t done so already.
Warming Tortillas
  1. Lay your flour tortillas on a flat surface.
  2. Microwave them for about 20 seconds or warm them in a skillet over low heat with a little cooking spray until they are pliable.
Assembling Burritos
  1. Spread a thin layer of refried beans on each tortilla.
  2. Add a scoop of cooked rice, then your shredded chicken, and salsa.
  3. Sprinkle the cheese over the chicken, dollop some sour cream, and add your diced avocado.
  4. Gently bring the sides of the tortilla inward and then roll it tightly from the bottom up, making sure all the layers stay inside.
  5. Set seam-side down on a plate.
Optional Crunch
  1. For added crunch, quickly pan-sear your wrapped burritos in a skillet with a bit of olive oil for about 2-3 minutes on each side until golden.
Serving
  1. Cut the burrito in half and plate with chopped lettuce on the side.
