Method
Preparation
- Gather all your ingredients on the counter.
- Ensure your shredded chicken is cooked and at room temperature for easier assembly.
- Pre-cook your rice if you haven’t done so already.
Warming Tortillas
- Lay your flour tortillas on a flat surface.
- Microwave them for about 20 seconds or warm them in a skillet over low heat with a little cooking spray until they are pliable.
Assembling Burritos
- Spread a thin layer of refried beans on each tortilla.
- Add a scoop of cooked rice, then your shredded chicken, and salsa.
- Sprinkle the cheese over the chicken, dollop some sour cream, and add your diced avocado.
- Gently bring the sides of the tortilla inward and then roll it tightly from the bottom up, making sure all the layers stay inside.
- Set seam-side down on a plate.
Optional Crunch
- For added crunch, quickly pan-sear your wrapped burritos in a skillet with a bit of olive oil for about 2-3 minutes on each side until golden.
Serving
- Cut the burrito in half and plate with chopped lettuce on the side.
- Enjoy your Seven Layer Chicken Burritos fresh and warm!
Notes
Substitutions include black beans or pinto beans for refried; grilled chicken can be swapped for seasoned beef or a meat substitute. Prep ingredients ahead for easier assembly. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
