Cooking the Rice Noodles
- In a large pot, bring water to a boil. Cook the rice noodles according to package instructions until al dente. Drain and set aside.
Sautéing the Chicken
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and cooked through, around 5-7 minutes. Remove from the skillet and set aside.
Stir-Frying the Vegetables
- In the same skillet, add the remaining sesame oil, minced garlic, broccoli, carrots, and red bell pepper. Sauté for about 4-5 minutes until the vegetables are tender yet crisp.
Combining Everything
- Return the chicken to the skillet. Add cooked noodles, soy sauce, honey, and grated ginger. Toss everything together until well combined and heated through, around 2-3 minutes.
Serving and Garnishing
- Spoon the sesame chicken noodle mixture into bowls. Finish with a sprinkle of sesame seeds and sliced green onions for a delicious touch.
Notes
If you're looking for Halal-friendly options, consider using turkey breast instead of chicken. Alternatively, tofu can be used for a vegetarian option. Have all your ingredients prepped before you start cooking to ensure smooth preparation. Avoid overcooking the vegetables to retain their crispiness.
