Ingredients

Main Ingredients
  • 1 cup orzo pasta A wonderful base that mimics rice but adds delightful chewiness.
  • 2 cups vegetable broth Make sure it's Halal-friendly!
  • 1 tablespoon olive oil To sauté the mushrooms and infuse flavor.
  • 1 cup mushrooms, sliced Use your favorite variety for maximum taste (button, cremini, or shiitake).
  • 2 cloves garlic, minced Because what's cooking without garlic?
  • 1 teaspoon dried thyme To add an aromatic hint of earthiness.
  • to taste salt and pepper Essential for flavoring.
  • to garnish chopped parsley Fresh herbs are always a nice touch.

Method

Cooking
  1. Begin by boiling a pot of lightly salted water. Once boiling, add the orzo and cook according to package instructions, usually about 8-10 minutes, until al dente.
  2. While the orzo is cooking, heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they are soft and golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant. Be careful not to let it burn!
  4. Once the orzo is cooked, drain any excess water and add it to the skillet with the mushrooms. Pour in the vegetable broth and dried thyme. Gently mix everything together until well combined.
  5. Season with salt and pepper to taste, and give it another gentle stir. Transfer it to serving plates, garnish with chopped parsley if desired, and enjoy your Savory Orzo with Mushrooms hot!

Notes

Feel free to swap out the mushrooms for any vegetable you love—zucchini or bell peppers work great too! Prep all your ingredients beforehand to keep things smooth during cooking. Make sure not to overcook the orzo; it should remain firm and chewy.
