  • 1 lb crab meat (fresh or canned, ensure it is halal-certified) Ensure the crab meat is halal-certified.
  • 1 none onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 none bell pepper, chopped
  • 4 cups chicken or seafood broth (halal-friendly) Use halal-friendly broth.
  • 1 can (14.5 oz) diced tomatoes Use with juice.
  • 1 tsp Old Bay seasoning
  • to taste none Salt and pepper
  • 2 tbsp olive oil
  • to taste none Chopped parsley for garnish

Preparation
  1. Start by chopping the onion, celery, bell pepper, and mincing the garlic. Having everything ready to go makes the cooking process smoother!
Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.
  2. Stir in the minced garlic and Old Bay seasoning, cooking for another minute until the garlic is aromatic.
  3. Pour in the halved broth and the can of diced tomatoes (with juice) into the pot. Bring the mixture to a gentle simmer.
  4. After about 5 minutes of simmering, add the crab meat to the pot, gently stirring to combine. Allow it to heat through for another 10-15 minutes.
  5. Add salt and pepper to your liking.
  6. Ladle the stew into bowls, garnishing each with chopped parsley. Enjoy!

Notes

If you can't find crab meat, substitute it with shrimp or a mix of different fish. A dash of lemon juice can brighten the flavor. Refrigerate leftovers for up to 3 days or freeze for up to 2 months.
