- Start by chopping the onion, celery, bell pepper, and mincing the garlic. Having everything ready to go makes the cooking process smoother!
Cooking
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.
- Stir in the minced garlic and Old Bay seasoning, cooking for another minute until the garlic is aromatic.
- Pour in the halved broth and the can of diced tomatoes (with juice) into the pot. Bring the mixture to a gentle simmer.
- After about 5 minutes of simmering, add the crab meat to the pot, gently stirring to combine. Allow it to heat through for another 10-15 minutes.
- Add salt and pepper to your liking.
- Ladle the stew into bowls, garnishing each with chopped parsley. Enjoy!
Notes
If you can't find crab meat, substitute it with shrimp or a mix of different fish. A dash of lemon juice can brighten the flavor. Refrigerate leftovers for up to 3 days or freeze for up to 2 months.
