  • 4 large eggs, beaten
  • 1 cup cooked sausage, crumbled or sliced Use your preferred type of sausage.
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 4 large flour tortillas

Preparation
  1. Start by cooking the sausage in a skillet over medium heat until browned. If using crumbled sausage, ensure it is fully cooked. Remove from heat and set aside.
  2. In the same skillet, whisk the beaten eggs and cook until just set, stirring frequently. Season with salt and pepper to taste.
Assembly
  1. Lay a tortilla flat on a clean surface. Place a portion of scrambled eggs, followed by the cooked sausage and a generous sprinkle of cheese.
  2. Fold in the sides of the tortilla and roll it tightly from one end to the other, securing all of the filling inside.
Cooking
  1. Heat a little oil in the skillet and place the roll-up seam-side down. Cook until golden and crispy, then flip to crisp the other side.
Serving
  1. Once cooked, slice each roll-up in half and serve warm. Enjoy your delicious creation!

Notes

These roll-ups can be customized with different types of sausages and cheeses. For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat using a microwave or skillet.
