Preparation
- Start by cooking the sausage in a skillet over medium heat until browned. If using crumbled sausage, ensure it is fully cooked. Remove from heat and set aside.
- In the same skillet, whisk the beaten eggs and cook until just set, stirring frequently. Season with salt and pepper to taste.
Assembly
- Lay a tortilla flat on a clean surface. Place a portion of scrambled eggs, followed by the cooked sausage and a generous sprinkle of cheese.
- Fold in the sides of the tortilla and roll it tightly from one end to the other, securing all of the filling inside.
Cooking
- Heat a little oil in the skillet and place the roll-up seam-side down. Cook until golden and crispy, then flip to crisp the other side.
Serving
- Once cooked, slice each roll-up in half and serve warm. Enjoy your delicious creation!
