Method
Preparation
- Chop the onion and mince the garlic. Gather all your other ingredients.
Sauté the Aromatics
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic. Sauté for about 3-4 minutes or until the onion is translucent.
Brown the Meat
- Add the ground beef to the skillet, breaking it apart. Cook for approximately 5-7 minutes, until the beef is browned. Drain any excess fat if needed.
Add the Rice and Liquids
- Stir in the rice, diced tomatoes with their juices, and beef broth. Season with salt and pepper. Bring to a boil.
Simmer the Skillet
- Reduce heat to low, cover the skillet, and simmer for about 20 minutes or until the rice is tender and has absorbed all the liquid.
Serve and Enjoy
- Fluff the rice with a fork, serve warm, and top with herbs or cheese as desired.
Notes
This dish can be made ahead of time, and it tastes even better the next day. For alternatives, ground chicken or turkey can replace beef, and brown rice can be used for a healthier option.
