Ingredients
  

Dough Ingredients
  • 4 cups all-purpose flour Spoon and level for accurate measurement.
  • 1 packet instant yeast (2 ¼ teaspoons) Ensure yeast is fresh and active.
  • 1 teaspoon salt
  • ¼ cup sugar
  • 1 cup whole milk, warmed Bring to room temperature for optimal mixing.
  • ¼ cup unsalted butter, melted Plus additional for brushing.
  • 2 large eggs Bring to room temperature.
  • ¼ cup honey
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • to taste sea salt for topping
Honey Butter
  • ¼ cup honey
  • ¼ cup unsalted butter, softened
  • 1 tablespoon fresh sage, chopped

Method
 

Dough Preparation
  1. In a large mixing bowl, combine warm milk with sugar and instant yeast. Allow the mixture to sit for about 5 minutes until it becomes frothy.
  2. In another bowl, whisk together the flour and salt.
  3. To the yeast mixture, add melted butter, honey, and eggs. Mix until combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  5. Place the dough on a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
Rising
  1. Shape the kneaded dough into a ball, place it in a greased bowl, and cover with a clean kitchen towel. Let it rise in a warm place for 1-2 hours or until doubled in size.
  2. Punch down the dough to release air. Divide it into small equal portions and roll each into a ball. Place the balls in a greased baking dish, spacing them evenly.
  3. Cover the rolls with a towel and let them rise again for about 30-45 minutes until puffed.
Baking
  1. While the rolls are rising, preheat your oven to 350°F (175°C).
  2. Brush the tops of the rolls with melted butter and sprinkle with sea salt. Bake for 20-25 minutes or until golden brown.
Finishing Touches
  1. In a small bowl, mix honey and softened butter until combined. Stir in the chopped sage.
  2. Once the rolls are baked, brush them with more melted butter and serve warm alongside sage honey butter. Enjoy!

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days. For longer storage, freeze individually wrapped rolls in a freezer bag for about 2 months. Reheat in the microwave for a few seconds to regain soft texture.
