Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and light in color. This should take about 2-3 minutes.
- Add the egg and vanilla extract to the mixture, beating until smooth.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Gently fold in the dark chocolate chunks and chopped pistachios. Avoid overmixing!
- Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheet, spaced about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers remain soft.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
For variations, you can substitute the dark chocolate with milk or white chocolate. To maintain a chewy texture, do not overbake the cookies.
