  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and light in color. This should take about 2-3 minutes.
  3. Add the egg and vanilla extract to the mixture, beating until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Gently fold in the dark chocolate chunks and chopped pistachios. Avoid overmixing!
  6. Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheet, spaced about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers remain soft.
  2. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For variations, you can substitute the dark chocolate with milk or white chocolate. To maintain a chewy texture, do not overbake the cookies.
