Preparation
- Preheat your oven to 350°F (175°C).
- If using pre-made pie crust, lay it in a 9-inch pie pan. If making from scratch, roll out your dough and fit it into the pan.
Mixing the Filling
- In a large mixing bowl, combine honey, brown sugar, and granulated sugar.
- Add melted butter and whisk well.
- Crack in the eggs one by one, mixing until fully incorporated. Stir in vanilla extract and sea salt.
Baking
- Pour the honey filling into the prepared crust, filling it just a bit over half full.
- Place the pie in the oven and bake for 40-45 minutes or until the filling is set and firm but slightly jiggly in the center.
Cooling and Serving
- Remove the pie from the oven and let it cool completely at room temperature.
- Optionally, sprinkle a pinch of sea salt over the top before serving.

Notes
To keep leftovers fresh, refrigerate in an airtight container for about 3-4 days. For freezing, wrap tightly and it can last about a month. To reheat, place in a 350°F oven for about 15 minutes.
