Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until fully combined.
- Whisk in the eggs and vanilla extract until fully incorporated and fluffy.
- In a separate bowl, mix the all-purpose flour, cocoa powder, salt, and baking powder. Gradually add this dry mix to the wet ingredients, stirring until just combined.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Generously dust the tops of the cookie dough with powdered sugar before baking.
Baking
- Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges look set but the centers appear slightly underbaked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to one week or freeze them for up to three months. Thaw before enjoying.
