Ingredients
  

For the filling
  • 4 cups rhubarb, chopped Fresh rhubarb works best.
  • 1 cup granulated sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch Helps thicken the filling.
For the crumble topping
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1 cup rolled oats
  • 1/2 cup brown sugar Can be substituted with coconut sugar.
  • 1/2 cup butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped rhubarb, granulated sugar, vanilla extract, and cornstarch. Toss together until well-coated.
  3. In another bowl, mix the all-purpose flour, rolled oats, brown sugar, melted butter, salt, and cinnamon until crumbly.
Assembly and Baking
  1. Pour the rhubarb mixture into a greased baking dish.
  2. Evenly spread the crumble topping over the rhubarb.
  3. Bake in the preheated oven for 30-40 minutes, until topping is golden brown and rhubarb is bubbling.
Serving
  1. Remove from the oven and let cool slightly. Serve warm with toppings like vanilla ice cream or whipped cream.

Notes

Store covered in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15 minutes before serving.
