Ingredients
  

Vegetables
  • 1 eggplant, diced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 onion, sliced
  • 3 cloves garlic, minced
Seasoning and Oil
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Toppings
  • 1 cup grated mozzarella cheese
  • Fresh basil for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) so it’s ready to create a magical bake.
  2. Dice the eggplant, slice the zucchini, chop the bell pepper, halve the cherry tomatoes, and slice the onion. Mince the garlic as well.
  3. In a large bowl, combine all the chopped vegetables and add olive oil, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Pour the vegetable mixture into a greased baking dish, spreading it out evenly.
  5. Sprinkle the grated mozzarella cheese generously on top of the vegetable layer.
Baking
  1. Place the baking dish in the preheated oven and let it bake for about 30-35 minutes, or until the vegetables are tender and the cheese is bubbling and golden.
Serving
  1. Remove from the oven, let it cool slightly, and garnish with fresh basil before serving.

Notes

For substitutions, try using squash or carrots instead of eggplant. Avoid common mistakes by ensuring even chopping of vegetables for consistent cooking. Store leftovers covered in the fridge for up to 3-4 days or freeze for up to three months. To reheat, bake at 350°F (175°C) for about 20-25 minutes.
