  • 1 whole rotisserie chicken, shredded 2 to 3 lb
  • 1 box stuffing mix 12 oz, any variety will do!
  • 1 cup chicken broth
  • 1 cup shredded cheese cheddar or mozzarella are excellent options
  • 1/2 cup diced onion optional, for extra flavor
  • 1/2 cup diced celery optional, for some crunch
  • 1/4 cup unsalted butter melted
  • to taste Salt and pepper
  • 1 tablespoon fresh parsley for garnish, optional

Preparation
  1. Preheat your oven to 350°F (175°C). Grab a large casserole dish and lightly grease it with non-stick spray or butter.
Preparing the Stuffing
  1. In a large mixing bowl, combine the stuffing mix, chicken broth, and melted butter. Add in the onion and celery if using. Mix well until the stuffing is evenly coated and let it sit for a few minutes to absorb the liquid.
Layering the Casserole
  1. Start by distributing half of the stuffing mix at the bottom of the casserole dish. Sprinkle the shredded rotisserie chicken evenly over the stuffing.
Adding Toppings
  1. Sprinkle the remaining stuffing on top and finish with a generous layer of shredded cheese. Feel free to add herbs or any additional toppings you love.
Baking
  1. Cover the dish with aluminum foil to keep the moisture in and bake in the preheated oven for 20 minutes. Remove the foil and let it bake for an additional 10 minutes, or until the top is golden and crispy.
Serving
  1. Once baked, let the casserole cool slightly. Garnish with fresh parsley before serving.
