Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the washed and quartered red potatoes with olive oil, salt, pepper, and garlic powder. Toss until all the potatoes are well-coated with the seasoning.
  3. Line a baking sheet with parchment paper or lightly grease it with olive oil. Spread the seasoned potatoes in a single layer.
Cooking
  1. Place the potatoes in the oven and roast for about 30-35 minutes, flipping them halfway through until they are golden brown and fork-tender.
  2. Sprinkle fresh herbs on top right before serving.

Notes

For an even crispier finish, consider broiling the potatoes for an extra 1-2 minutes at the end. Make sure the potatoes are in a single layer on the baking sheet to avoid steaming.
