For the Roasted Plums
  • 4 pieces ripe plums, diced Substitutions include peaches or nectarines.
  • 1 cup sugar, divided Use half for the plums and half for the ice cream base.
  • 1 tablespoon lemon juice Enhances the flavor of the plums.
For the Ice Cream Base
  • 2 cups heavy cream For a lighter version, swap with Greek yogurt and whole milk.
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). In a bowl, combine the diced plums, half of the sugar (1/2 cup), and lemon juice. Let sit for about 10 minutes.
  2. Transfer the mixture to a baking dish and roast for approximately 20 minutes, or until the plums are soft.
Blending the Plums
  1. Allow the roasted plums to cool, then blend in a food processor until smooth. Set aside.
Making the Ice Cream Base
  1. In a large mixing bowl, whisk the remaining 1/2 cup of sugar, heavy cream, whole milk, vanilla extract, and salt until the sugar is fully dissolved.
Combining
  1. Slowly fold in the cooled plum mixture into the ice cream base to create a beautiful marbled effect.
Chilling and Freezing
  1. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour into a shallow dish and place it in the freezer, stirring every 30 minutes until it reaches the desired consistency (about 3-4 hours).
Serving

Notes

Store in an airtight container in the freezer for up to two weeks. If too hard, let it sit at room temperature for a few minutes before scooping.
