Preparation
- Preheat your oven to 400°F (200°C). In a bowl, combine the diced plums, half of the sugar (1/2 cup), and lemon juice. Let sit for about 10 minutes.
- Transfer the mixture to a baking dish and roast for approximately 20 minutes, or until the plums are soft.
Blending the Plums
- Allow the roasted plums to cool, then blend in a food processor until smooth. Set aside.
Making the Ice Cream Base
- In a large mixing bowl, whisk the remaining 1/2 cup of sugar, heavy cream, whole milk, vanilla extract, and salt until the sugar is fully dissolved.
Combining
- Slowly fold in the cooled plum mixture into the ice cream base to create a beautiful marbled effect.
Chilling and Freezing
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour into a shallow dish and place it in the freezer, stirring every 30 minutes until it reaches the desired consistency (about 3-4 hours).
Serving

Store in an airtight container in the freezer for up to two weeks. If too hard, let it sit at room temperature for a few minutes before scooping.
