  • 2 pounds baby potatoes Use small-sized baby potatoes for best results.
  • 4 tablespoons unsalted butter
  • 1 cup grated Parmesan cheese Freshly grated cheese is preferred.
  • 4 cloves roasted garlic Roast garlic until soft and sweet.
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley for garnish (optional) Use for presentation.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes until clean, leaving the skins on for extra texture.
  3. In a small saucepan over low heat, melt the unsalted butter and add the roasted garlic, stirring until well combined.
  4. In a large bowl, combine the potatoes with the garlic butter mixture, ensuring they are thoroughly coated. Season with salt and freshly ground pepper to taste.
Cooking
  1. Arrange the potatoes on a baking sheet in a single layer and bake for about 30 to 35 minutes, or until crispy and golden brown, turning them halfway through for even cooking.
  2. Once done, remove the potatoes from the oven and sprinkle them generously with grated Parmesan cheese, returning them to the oven for a couple of minutes to melt the cheese slightly.
  3. Garnish with fresh parsley if desired and serve hot.

Notes

For a different flavor twist, feel free to use olive oil instead of butter, or try vegan cheese for a dairy-free version. Ensure you don’t overcrowd the baking sheet to avoid sogginess. Cut larger potatoes in half for uniform cooking.
