Ingredients
  

For the Chickpeas
  • 1 can can of chickpeas, drained and rinsed Ensure chickpeas are well drained and rinsed for optimal crunch.
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
For the Gyros
  • 4 pieces Pita bread Warm before serving.
  • to taste Fresh vegetables (lettuce, tomatoes, cucumbers) Use your favorite toppings.
  • 1 Tzatziki sauce For drizzling.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to prepare for roasting.
  2. In a mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until evenly coated.
  3. Line a baking sheet with parchment paper. Spread the seasoned chickpeas in a single layer on the sheet.
  4. Roast chickpeas in the preheated oven for about 20-25 minutes, shaking the pan halfway through for even cooking, until they're golden brown and crunchy.
  5. While chickpeas roast, warm your pita bread briefly in the oven or on a hot skillet.
Assembly
  1. Once the chickpeas are done roasting and pita is warm, take a pita bread, fill it with roasted chickpeas, fresh lettuce, tomatoes, and cucumber slices.
  2. Drizzle generously with tzatziki sauce and squeeze lemon juice for extra flavor, if desired.
Serving
  1. Serve immediately and enjoy your delightful roasted chickpea gyros!

Notes

For variations, feel free to adjust spices or add other toppings. Store leftovers in an airtight container for up to 3 days.
