Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to create the perfect roasting environment.
  2. Prepare the cherry tomatoes: Halve the tomatoes and toss them in a bowl with olive oil, salt, and pepper.
  3. Spread the coated tomatoes evenly on a baking sheet and roast for about 20-25 minutes until caramelized and bursting with flavor.
  4. Sauté the garlic in a small pan over medium heat for about 1-2 minutes until fragrant but not browned.
Combining
  1. Once the tomatoes are ready, let them cool slightly. Then combine the roasted tomatoes, sautéed garlic, diced onion, chopped cilantro, and lime juice in a mixing bowl.
  2. Stir gently to combine and taste to adjust seasoning with salt or pepper.

Notes
