Preparation
  1. Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking dish by lining it with parchment paper for easy removal.
  2. In a baking dish, spread the pitted cherries evenly. Roast in the preheated oven for about 15 minutes, until they’re soft and slightly caramelized. Set aside to cool slightly.
Mixing the Cake Batter
  1. In a large mixing bowl, combine the melted butter and sugar. Stir until well mixed.
  2. Add the eggs and vanilla extract, blending them into the mixture until smooth and creamy.
  3. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  5. Fold in the roasted cherries gently, ensuring even distribution throughout the batter.
Baking
  1. Pour the batter into your prepared baking dish, smoothing the top with a spatula.
  2. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  3. Cool in the pan on a wire rack before slicing into squares.

Notes
