Preparation
- Preheat your oven to 375°F (190°C).
- Place the pitted cherries on a baking sheet lined with parchment paper and roast them for about 10-12 minutes, until they start to soften and release their juices.
- In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the granulated sugar, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the cocoa powder, all-purpose flour, salt, and baking powder. Gradually stir this mixture into the wet ingredients, being careful not to overmix.
- Gently fold in the roasted cherries into the brownie batter.
- Pour the brownie batter into a greased baking dish and spread it evenly.
Cooking
- Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool in the pan before cutting them into squares.
Notes
Store in an airtight container at room temperature for up to 3 days. They can also be refrigerated for up to a week or frozen for longer storage. Reheat in the microwave for 20-30 seconds before serving.
