  • 1 cup fresh cherries, pitted Make sure to use fresh cherries for the best flavor!
  • 1/2 cup unsalted butter Can substitute with coconut oil.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the pitted cherries on a baking sheet lined with parchment paper and roast them for about 10-12 minutes, until they start to soften and release their juices.
  3. In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the granulated sugar, eggs, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the cocoa powder, all-purpose flour, salt, and baking powder. Gradually stir this mixture into the wet ingredients, being careful not to overmix.
  5. Gently fold in the roasted cherries into the brownie batter.
  6. Pour the brownie batter into a greased baking dish and spread it evenly.
Cooking
  1. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Let the brownies cool in the pan before cutting them into squares.

Notes

Store in an airtight container at room temperature for up to 3 days. They can also be refrigerated for up to a week or frozen for longer storage. Reheat in the microwave for 20-30 seconds before serving.
