Preparation
- Preheat your oven to 350°F (175°C).
- Prepare your cherries by tossing them in a little sugar and spreading them on a baking sheet. Roast them for about 10-15 minutes until they soften and caramelize.
Mixing Ingredients
- In a bowl, melt the unsalted butter, then add sugar, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently stir in the roasted cherries, making sure to distribute them evenly throughout the batter.
Baking
- Pour the batter into a greased 9×9 inch baking pan, smoothing out the top.
- Bake for about 25-30 minutes. A toothpick inserted in the center should come out with a few moist crumbs.
- Allow to cool slightly before cutting into squares. Enjoy!
Notes
For perfect brownies, do not overbake. Store leftovers in an airtight container in the refrigerator for up to 5 days.
