Ingredients
  

For the brownies
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup unsalted butter, melted Can substitute with coconut oil or margarine
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour blend
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cherries by tossing them in a little sugar and spreading them on a baking sheet. Roast them for about 10-15 minutes until they soften and caramelize.
Mixing Ingredients
  1. In a bowl, melt the unsalted butter, then add sugar, eggs, and vanilla extract. Mix until well combined.
  2. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  3. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Gently stir in the roasted cherries, making sure to distribute them evenly throughout the batter.
Baking
  1. Pour the batter into a greased 9×9 inch baking pan, smoothing out the top.
  2. Bake for about 25-30 minutes. A toothpick inserted in the center should come out with a few moist crumbs.
  3. Allow to cool slightly before cutting into squares. Enjoy!

Notes

For perfect brownies, do not overbake. Store leftovers in an airtight container in the refrigerator for up to 5 days.
