Ingredients

For the cake
  • 24 oz 1 box of Ritz crackers
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup store-bought salted caramel sauce (plus extra for drizzling)
  • 1 tsp vanilla extract
  • a pinch sea salt (for topping)

Method

Preparation
  1. In a mixing bowl, whip the heavy cream until stiff peaks form. Set aside for later use.
  2. In another bowl, combine the softened cream cheese and powdered sugar. Beat until smooth and creamy.
  3. Fold the whipped cream into the cream cheese mixture until well blended. Add in the vanilla extract and mix gently.
Layering
  1. Line the bottom of an 8×8-inch baking dish with a layer of Ritz crackers, ensuring they cover the entire base.
  2. Spread a layer of the cream mixture over the crackers, smoothing it out evenly.
  3. Drizzle a generous amount of salted caramel on top of the cream layer.
  4. Continue layering with more Ritz crackers, cream mixture, and caramel until you’ve reached the top of the dish—end with the cream layer.
Chilling
  1. Refrigerate the cake for at least 4 hours, preferably overnight, to allow the flavors to meld together and the cake to set.
Serving
  1. Before serving, drizzle additional salted caramel on top and sprinkle with a pinch of sea salt for an extra touch.

Notes

Pairs beautifully with fresh berries, vanilla ice cream, or a cup of coffee.
