  • 0.25 teaspoons salt
  • 0.5 teaspoons cinnamon
For the Ricotta Filling

  • 1 teaspoon vanilla extract
  • 0.5 cups granulated sugar Use a pinch from this for the filling
  • 0.5 cups powdered sugar For dusting, optional

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9 inch baking dish with butter or line it with parchment paper.
  3. In a large mixing bowl, combine softened butter, granulated sugar, flour, salt, and cinnamon until you achieve a crumbly consistency.
  4. Press about two-thirds of the crumble mixture into the bottom of the prepared baking dish.
  5. In another bowl, blend ricotta cheese with vanilla extract and a pinch of sugar. Spread this filling evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the ricotta layer.

  2. Allow the bars to cool completely in the dish before cutting them into squares. Dust with powdered sugar if desired.

Notes

For lighter bars, consider using low-fat ricotta. For gluten-free, substitute flour with a gluten-free blend. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
