Ingredients
  

For the crust
  • 1/2 cup butter, melted Make sure to melt before mixing.
  • 1/2 cup flour
  • 1/2 cup sugar For the crust.
For the filling
  • 8 oz cream cheese, softened Ensure it is at room temperature.
  • 1 cup sugar For the cream cheese filling.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt Helps enhance the flavor.
For the topping
  • 2 cups rhubarb, chopped Fresh or frozen can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.
  3. In a mixing bowl, combine the melted butter, flour, and 1/2 cup of sugar until crumbly. Press this mixture firmly into the bottom of the prepared dish.
Making the Filling
  1. In another bowl, beat the softened cream cheese, remaining 1/2 cup of sugar, eggs, vanilla extract, and salt until smooth and creamy.
  2. Pour this mixture over the crumb base.
Baking
  1. Sprinkle the chopped rhubarb evenly over the cream cheese layer.
  2. Bake for 40-45 minutes, or until the edges are golden and the center is set.
Cooling and Serving
  1. Remove from the oven and let cool completely before cutting into squares.

Notes

These bars can be topped with caramel sauce or powdered sugar for extra flavor. They store well in the refrigerator for 4-5 days or can be frozen for up to three months.
