  • 2 cups cooked rice (preferably day-old for texture)
  • 1 cup cooked chicken, shredded (use halal chicken)
  • 2 pieces eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce (ensure it’s halal)
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 small onion, chopped

Preparation
  1. If you’re using freshly cooked rice, spread it out on a baking sheet to cool and dry out; this helps prevent sticking later. Day-old rice works best!
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the beaten eggs, scrambling them until fully cooked. Remove from the pan and set aside.
  3. In the same pan, add another tablespoon of oil. Once hot, add the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Stir in the shredded cooked chicken and mixed vegetables. Cook for about 3-4 minutes until heated through.
  5. Add the cooled rice to the pan, mixing well with the chicken and vegetables. Pour the soy sauce over the mixture, stirring everything together. Cook for another 5-7 minutes, allowing the rice to fry slightly for added texture.
  6. Stir in the cooked eggs, and season with salt and pepper as needed. Garnish with chopped green onions before serving.

Notes

For variations, consider adding tofu for a vegetarian option or different vegetables like bell peppers or broccoli. Ensure rice is cooled to avoid mushiness; cooking over high heat adds texture.
