- If you’re using freshly cooked rice, spread it out on a baking sheet to cool and dry out; this helps prevent sticking later. Day-old rice works best!
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the beaten eggs, scrambling them until fully cooked. Remove from the pan and set aside.
- In the same pan, add another tablespoon of oil. Once hot, add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the shredded cooked chicken and mixed vegetables. Cook for about 3-4 minutes until heated through.
- Add the cooled rice to the pan, mixing well with the chicken and vegetables. Pour the soy sauce over the mixture, stirring everything together. Cook for another 5-7 minutes, allowing the rice to fry slightly for added texture.
- Stir in the cooked eggs, and season with salt and pepper as needed. Garnish with chopped green onions before serving.
Notes
For variations, consider adding tofu for a vegetarian option or different vegetables like bell peppers or broccoli. Ensure rice is cooled to avoid mushiness; cooking over high heat adds texture.
