Preparation
- Start by cutting fresh watermelon into chunks, removing any seeds. Blend the pieces in a blender until you achieve a smooth puree. This should yield approximately 2 cups.
- In a mixing bowl, whisk together the glutinous rice flour and sugar.
- Gradually add the watermelon puree and water to the dry ingredients. Mix well until you have a smooth, lump-free batter.
- Pour the batter into a heatproof dish that fits inside a steamer. Cover it with a clean kitchen towel or foil to prevent condensation from dripping into the mixture.
- Steam over high heat for about 20 to 25 minutes or until it becomes slightly translucent and firm to the touch.
- Once cooked, allow the mochi to cool for about 10 minutes. Sprinkle a clean surface generously with cornstarch.
- Transfer the mochi dough onto the cornstarch-dusted surface. Divide into equal pieces (around 12) and shape each piece into a small disc, adding a fresh fruit piece in the center if desired.
- Dust the outside of each mochi with cornstarch to prevent sticking, and they are ready to serve.
