Preparation
- Peel and slice the ripe peaches, setting aside some slices for garnish.
Make the Mousse
- In a mixing bowl, whip the heavy cream on medium speed until it begins to thicken.
- Gradually add sugar and continue to whip until soft peaks form.
Add Yogurt and Flavor
- In another bowl, combine peach yogurt, vanilla extract, and gelatin (if using).
- Gently fold this mixture into the whipped cream until well combined, taking care not to deflate the cream.
Layer the Trifle
- In a large trifle dish or individual glasses, begin layering with ladyfinger pieces or sponge cake.
- Add a layer of mousse, followed by a layer of sliced peaches. Repeat the layers until the dish is full, finishing with a layer of mousse on top.
Chill & Serve
- Cover the trifle and place it in the refrigerator for at least 2 hours before serving.
- Garnish with mint leaves and reserved peach slices before enjoying.
