  1. Begin by washing and cutting your fresh lemons. Squeeze enough lemons to yield one cup of fresh lemon juice.
  2. In a large pitcher, combine the 1/2 cup of sugar with about one cup of cold water. Stir well until the sugar is fully dissolved, about 2-3 minutes.
  3. Once the sugar is dissolved, add the remaining 3 cups of cold water and the fresh lemon juice to the pitcher. Give it a gentle stir to meld the flavors together.
  4. Let the mixture chill in the refrigerator for about 30 minutes. If you’re in a hurry, you can skip this step, but chilling enhances the flavor.
  5. Fill glasses with ice cubes, pour the lemon soda over the ice, and garnish with lemon slices and fresh mint leaves. Serve immediately.

Notes

Store any leftovers in an airtight pitcher in the fridge for 3-4 days. Do not freeze as it changes the texture. Pour over ice and stir gently before serving again to revive the fizz. Fresh lemon juice is recommended over bottled varieties for optimal taste.
