  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup white chocolate chips optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, about 2-3 minutes.
  3. Beat in the egg, cocoa powder, and red food coloring until fully combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to your wet ingredients, mixing until just combined.
  5. Fold in the white chocolate chips if desired.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges are slightly firm but the centers are soft.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. When ready to eat, microwave for about 10 seconds for a freshly baked taste.
