Preparation
- Preheat your oven according to the cake mix instructions and prepare a baking pan with non-stick spray or parchment paper.
- Mix the red velvet cake batter as per the cake mix instructions and pour it into the prepared pan. Bake until a toothpick comes out clean, then let it cool completely.
- Once the cake cools, crumble it thoroughly into a large bowl using your fingers.
- Add the cream cheese frosting to the crumbled cake and mix until everything is evenly combined.
- Scoop approximately 1 tablespoon of the cake mixture and roll it into a ball. Place it on a baking sheet lined with parchment paper. Repeat until all the mixture has been rolled into balls.
- In a microwave-safe bowl, melt the chocolate candy coating, stirring every 30 seconds until smooth.
- Dip one end of each lollipop stick into the melted chocolate and insert it into the center of a cake ball, about halfway.
- Dip each cake pop in the melted chocolate coating and allow excess chocolate to drizzle off.
- If desired, add sprinkles before the coating sets.
- Place the cake pops upright in a glass or foam block to harden. Once the chocolate is set, they are ready to be enjoyed.
Notes
For a healthier twist, use Greek yogurt instead of some frosting. Make sure the cake is completely cool before crumbling to avoid a gooey mixture.
