Ingredients
  

Chicken Mixture
  • 2 cups cooked, shredded chicken Use Halal chicken
  • 1 can condensed cream of chicken soup (10.5 oz) Ensure it’s Halal
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup frozen mixed vegetables Carrots, peas, and corn work well
Biscuit Topping
  • 1 package Cheddar Bay Biscuit Mix (red box) Found in most stores
  • 1/2 cup water
  • 1/4 cup melted butter Ensure it’s Halal
  • Fresh parsley for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, milk, garlic powder, onion powder, and frozen vegetables. Mix well until thoroughly combined.
  3. Stir in 1 cup of shredded cheddar cheese until distributed evenly within the mixture.
  4. Transfer this creamy chicken mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  5. In a separate bowl, prepare the Cheddar Bay Biscuit Mix according to the package instructions, mixing it with the water until just combined.
  6. Using a spoon or your hands, dollop the biscuit dough over the chicken mixture, ensuring it covers the top completely.
  7. Drizzle the melted butter over the biscuit topping.
Baking
  1. Place the baking dish in the preheated oven and bake for 25-30 minutes or until the biscuits are golden brown and the filling is bubbly.
Serving
  1. Once baked, remove the casserole from the oven and let it cool slightly. Garnish with fresh parsley if desired, and serve warm.

Notes

Feel free to swap out the chicken for Halal turkey or a meat alternative for a vegetarian version. Be cautious not to overbake the biscuits, as they could become dry. Double-check that your cream of chicken soup is Halal-certified.
