Base Ingredients
  • 1 cup red lentils Ensure they are rinsed before soaking.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • to taste Salt and pepper
  • 1/4 cup fresh parsley, chopped Can substitute with cilantro or spinach.
  • Oil for frying Enough to cover the bottom of the pan about half an inch deep.
  • Water as needed Use to adjust mixture consistency.

Method
 

Preparation
  1. Soak the red lentils in water for about 15 to 20 minutes.
  2. While the lentils are soaking, finely chop the onion and mince the garlic.
  3. Drain the lentils and mix them in a bowl with onion, garlic, cumin, coriander, salt, pepper, and parsley. Add water if needed.
Cooking
  1. Heat oil in a frying pan over medium heat until it shimmers.
  2. Drop spoonfuls of the lentil mixture into the hot oil, shaping them into patties. Fry until golden brown, about 2-3 minutes on each side.
  3. Transfer fritters to a paper towel-lined plate to drain excess oil.
Serving
  1. Serve hot with your favorite sauce or enjoy them plain.

Notes

Fritters can be refrigerated for up to 3 days or frozen for up to a month. Reheat in a toaster oven or skillet.
