Preparation
- Soak the red lentils in water for about 15 to 20 minutes.
- While the lentils are soaking, finely chop the onion and mince the garlic.
- Drain the lentils and mix them in a bowl with onion, garlic, cumin, coriander, salt, pepper, and parsley. Add water if needed.
Cooking
- Heat oil in a frying pan over medium heat until it shimmers.
- Drop spoonfuls of the lentil mixture into the hot oil, shaping them into patties. Fry until golden brown, about 2-3 minutes on each side.
- Transfer fritters to a paper towel-lined plate to drain excess oil.
Serving
- Serve hot with your favorite sauce or enjoy them plain.
Notes
Fritters can be refrigerated for up to 3 days or frozen for up to a month. Reheat in a toaster oven or skillet.
