  • 1 cup raspberry yogurt Can substitute with strawberry or vanilla yogurt.
  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon honey or maple syrup (optional) Adjust sweetness to taste.
  • to taste Fresh raspberries for topping

Method
 

Preparation
  1. In a mixing bowl, combine the raspberry yogurt, chia seeds, and milk. Stir until well blended.
  2. If you'd like a touch of sweetness, add the honey or maple syrup to the mixture and stir it in.
  3. Cover the bowl with plastic wrap or transfer the mixture into individual serving cups. Refrigerate for at least 2 hours, or overnight for best results.
  4. Just before serving, give the pudding a good stir and top it with fresh raspberries.

Notes

Can be stored in the refrigerator for up to 5 days. Individual portions can be frozen for longer storage. Reheating isn't necessary, but can be warmed in the microwave if desired.
