Cookie Base
  • 1 cup butter, softened Make sure to use halal-friendly ingredients.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Raspberry Swirl
  • 1/2 cup raspberry puree Use fresh or frozen raspberries, pureed.
  • 1/2 cup powdered sugar For drizzling over cookies.

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, blending until fully combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients.
  5. Fold in the raspberry puree gently to create swirls.
Baking
  1. Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
  2. Bake for 10-12 minutes until edges are lightly golden.
  3. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  4. Drizzle powdered sugar over cooled cookies for decoration.

Notes

Use fresh raspberries for best flavor. Don’t skip the cooling time to let cookies set properly. Experiment with different fruit purees for variety.
