- Add the egg and vanilla extract, blending until fully combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients.
- Fold in the raspberry puree gently to create swirls.
Baking
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes until edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
- Drizzle powdered sugar over cooled cookies for decoration.
Notes
Use fresh raspberries for best flavor. Don’t skip the cooling time to let cookies set properly. Experiment with different fruit purees for variety.
