Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy for about 2-3 minutes.
- Add thawed raspberry lemonade concentrate, lemon juice, and lemon zest into the butter and sugar mixture. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to your wet ingredients, mixing just until combined.
- Gently fold in the fresh chopped raspberries.
Baking
- Scoop tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Dust with powdered sugar or drizzle with citrus glaze for extra flair. Store in an airtight container for up to a week, or freeze for three months.
