Ingredients
  

For the crust
  • 1/4 cup butter, melted Use melted for easier mixing
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs Large eggs are preferred
For the filling
  • 1 cup raspberries (fresh or frozen) Fresh is preferred, but frozen works too
  • 1 cup lemon juice Freshly squeezed is best
  • 1 cup granulated sugar Additional sugar for filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the melted butter, granulated sugar, and flour until you achieve a crumbly mixture to form your crust.
  3. Stir in the eggs, salt, and baking powder into the crust mixture. Spread the mixture evenly in a greased 9x9-inch baking dish.
  4. Bake for about 15 minutes until lightly golden.
Filling
  1. In another bowl, whisk together the lemon juice, raspberries, and additional sugar until the raspberries break down a bit.
  2. Pour this mixture over the pre-baked crust.
  3. Return the dish to the oven and bake for an additional 20-25 minutes until the filling is set.
Cooling and Serving
  1. Allow the bars to cool down thoroughly at room temperature before slicing them into squares.
  2. Enjoy the vibrant flavors!

Notes

If using frozen raspberries, they work wonderfully too! Make sure to let the bars cool completely before slicing for clean edges. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
