Ingredients
  

For the crumble and crust
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
For the filling
  • 2 cups fresh raspberries Can substitute with frozen raspberries if needed.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix the flour, rolled oats, brown sugar, baking powder, and salt.
  3. Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
Assembly
  1. Press half of the crumb mixture firmly into the bottom of the prepared pan to form the crust.
  2. Spread the fresh raspberries evenly over the crust.
  3. Crumble the remaining oat mixture over the raspberries to create a topping.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until the top is golden brown.
  2. Allow to cool completely before lifting the bars out of the pan using the parchment paper.
  3. Cut them into squares and serve.

Notes

For best results, press down the crust firmly. Store in an airtight container in the refrigerator for up to a week or freeze for three months. Reheat in the oven at 350°F (175°C) for about 10 minutes before serving.
