Preparation
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix the flour, rolled oats, brown sugar, baking powder, and salt.
- Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
Assembly
- Press half of the crumb mixture firmly into the bottom of the prepared pan to form the crust.
- Spread the fresh raspberries evenly over the crust.
- Crumble the remaining oat mixture over the raspberries to create a topping.
Baking
- Bake in the preheated oven for about 30 minutes, or until the top is golden brown.
- Allow to cool completely before lifting the bars out of the pan using the parchment paper.
- Cut them into squares and serve.
Notes
For best results, press down the crust firmly. Store in an airtight container in the refrigerator for up to a week or freeze for three months. Reheat in the oven at 350°F (175°C) for about 10 minutes before serving.
