Ingredients

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted Ensure your butter is melted for easier mixing.
Filling
  • 1 cup shredded coconut Preferably unsweetened.
  • 1 cup raspberry preserves
  • 14 oz sweetened condensed milk Almond or oat milk can be used as a substitute.
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped nuts Optional, for added crunch.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure it’s ready for your delicious bars.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until evenly coated, then press the mixture firmly into the bottom of a greased 9x13-inch baking pan.
  3. Spread the raspberry preserves over the crust, ensuring it covers the entire area evenly.
  4. Sprinkle the shredded coconut over the raspberry layer, followed by the chocolate chips. If using nuts, sprinkle them on top of the chocolate chips.
  5. Drizzle the sweetened condensed milk evenly over the entire mixture, making sure every bit is covered.
  6. Place the pan in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown and the center is set.
  7. Let the bars cool in the pan before slicing them into squares or rectangles. Enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for about 3 months. Thaw at room temperature or microwave slightly to restore texture. Consider using coconut oil as a butter alternative for a tropical flavor.
