  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8-inch round cake pan with butter or cooking spray, and lightly dust with flour to prevent sticking.
Cake Mixing
  1. In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Melt them together in the microwave in 30-second intervals, stirring in between, until smooth and fully combined.
  2. In a mixing bowl, whisk together the eggs, sugar, and vanilla extract until light and fluffy.
  3. Add the melted chocolate mixture to the egg mixture, stirring constantly to avoid cooking the eggs.
  4. Gently fold in the raspberry puree until well combined.
  5. Sift the all-purpose flour over the mixture and fold it in gently, ensuring no lumps remain.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Decorate your cooled Raspberry Chocolate Cake with fresh raspberries on top and a light dusting of powdered sugar before serving.

Notes

For a dairy-free option, substitute unsweetened applesauce for the butter and use dairy-free chocolate. Keep an eye on the baking time, and ensure ingredients are at room temperature for the best texture.
