Preparation
- If using fresh raspberries, rinse them gently under cold water and set them aside. If using frozen, ensure they are completely thawed.
Cooking
- In a medium saucepan over medium heat, combine the raspberries, sugar, cornstarch, lemon juice, and salt. Stir gently to mix the ingredients until the raspberries start to break down and release their juices, approximately 3-4 minutes.
- Continue to cook while stirring frequently. The mixture will begin to thicken as it heats. Cook for about 5-7 minutes, or until it reaches a syrupy consistency.
- Remove the saucepan from the heat and let the raspberry filling cool completely. It will thicken even more as it cools.
- Once cooled, it’s ready to be used! Spread it between layers of your favorite cake or refrigerate it until you’re ready to use it.
Notes
Storing: Place in an airtight container and refrigerate for up to one week or freeze for up to three months. Thaw in the refrigerator overnight before use.
