Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a microwave-safe bowl, combine the dark chocolate chips and unsalted butter. Microwave in 20-second increments, stirring until melted and smooth.
- In a separate bowl, whisk together sugar and eggs until light and fluffy.
- Pour the melted chocolate mixture into the sugar-egg mixture and stir until combined. Add vanilla extract and mix again.
- Gently fold in the flour, cocoa powder, and salt until just combined. Do not overmix.
- Pour half the batter into the prepared pan, scatter fresh raspberries on top, and spoon remaining batter over the raspberries, mostly covering them.
Baking
- Bake in the preheated oven for 25-30 minutes. A toothpick inserted should come out with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack. Let them cool completely before slicing.
Notes
Store tightly wrapped in plastic wrap or in an airtight container for up to 1 week in the refrigerator. They can be frozen for up to 3 months.
