- In a large mixing bowl, combine rolled oats, a pinch of salt, and chopped almonds. Stir well to mix.
- Add almond butter, honey (or maple syrup), and vanilla extract into the bowl.
- Gently fold in fresh raspberries. If using freeze-dried, crush them slightly first.
- Mix everything together until fully combined. The mixture might feel sticky.
- Roll small portions of the mixture into bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
- Once firm, store in an airtight container or enjoy immediately.
Notes
Store in an airtight container for up to a week in the refrigerator. Can freeze for up to three months. Allow to come to room temperature before eating.
