  • 1 cup rolled oats
  • 1/4 cup chopped almonds
  • pinch salt
Wet Ingredients
  • 1/2 cup almond butter Can substitute with sunflower seed butter for allergies.
  • 1/2 cup honey or maple syrup Maple syrup is a vegan-friendly option.
  • 1/2 teaspoon vanilla extract
Fruity Addition
  • 1/2 cup fresh raspberries Can use freeze-dried raspberries, crush slightly before adding.

Method
 

Preparation
  1. In a large mixing bowl, combine rolled oats, a pinch of salt, and chopped almonds. Stir well to mix.
  2. Add almond butter, honey (or maple syrup), and vanilla extract into the bowl.
  3. Gently fold in fresh raspberries. If using freeze-dried, crush them slightly first.
  4. Mix everything together until fully combined. The mixture might feel sticky.
  5. Roll small portions of the mixture into bite-sized balls, about 1 inch in diameter.
  6. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  7. Once firm, store in an airtight container or enjoy immediately.

Notes

Store in an airtight container for up to a week in the refrigerator. Can freeze for up to three months. Allow to come to room temperature before eating.
