Preparation
- In a large pot, bring salted water to a rolling boil. Add in the pasta and cook according to package directions until al dente, typically about 8-10 minutes. Stir occasionally.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, approximately 30 seconds.
- Add the fresh spinach to the skillet, stirring gently until wilted (about 1-2 minutes). Season with salt and pepper.
- Once the pasta is al dente, reserve about 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the garlic and spinach mixture, tossing well.
- If the pasta seems dry, add in a little of the reserved pasta water until you reach your desired consistency.
- Plate the pasta and generously sprinkle with grated Parmesan cheese before serving.
Notes
Storage: Place cooled leftover pasta in an airtight container and refrigerate for up to 3 days. Reheat gently in a skillet over low heat with a splash of olive oil or pasta water.
