  • 8 oz pasta (spaghetti or penne) Use whole grain or gluten-free alternatives if preferred.
  • 4 cups fresh spinach, loosely packed Rinse well and remove stems before use.
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced Do not let it brown; cook until fragrant.
  • to taste Salt and pepper
  • Grated Parmesan cheese, for serving Can substitute with nutritional yeast for a dairy-free option.

Preparation
  1. In a large pot, bring salted water to a rolling boil. Add in the pasta and cook according to package directions until al dente, typically about 8-10 minutes. Stir occasionally.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, approximately 30 seconds.
  3. Add the fresh spinach to the skillet, stirring gently until wilted (about 1-2 minutes). Season with salt and pepper.
  4. Once the pasta is al dente, reserve about 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the garlic and spinach mixture, tossing well.
  5. If the pasta seems dry, add in a little of the reserved pasta water until you reach your desired consistency.
  6. Plate the pasta and generously sprinkle with grated Parmesan cheese before serving.

Notes

Storage: Place cooled leftover pasta in an airtight container and refrigerate for up to 3 days. Reheat gently in a skillet over low heat with a splash of olive oil or pasta water.
