Preparation
- In a bowl, combine sliced beef with soy sauce and cornstarch. Allow it to marinate for about 10 minutes while you prep the veggies.
Cooking
- In a large pan or wok, heat vegetable oil over medium-high heat.
- Once the oil is hot, add the marinated beef. Sear it for about 3-4 minutes until it’s browned and nearly cooked through. Remove the beef from the pan and set aside.
- In the same pan, add garlic and ginger, stirring for about 30 seconds to release their aromas. Next, toss in the mixed vegetables and stir-fry for about 4-5 minutes until they are just tender but still crunchy.
- Return the cooked beef to the pan along with sesame oil, salt, and pepper. Stir well to combine and let everything heat for another 2-3 minutes.
- Serve hot, garnished with chopped green onions and sesame seeds if you like.
Notes
Feel free to swap beef for chicken or tofu if desired. Pre-cut vegetables and beef in advance to save time. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
