  1. Start by dicing your chicken breasts into bite-sized pieces.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Once hot, add the diced chicken and season with salt and pepper.
  3. Cook the chicken for about 5-7 minutes or until golden brown and fully cooked through, stirring occasionally.
  4. Once cooked, add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  5. Pour in the chicken broth, then add the heavy cream and ranch seasoning mix, stirring well to combine all the flavors.
  6. Add the spinach and halved cherry tomatoes, allowing everything to simmer for about 5 minutes, until the spinach has wilted and the sauce has thickened slightly.
  7. Taste the sauce and adjust the seasoning if needed.
  8. Serve immediately with your favorite sides, such as rice or a fresh salad.

Notes

Substitutions: Boneless thighs can be used instead of chicken breasts. For a lighter option, consider using half and half instead of heavy cream. Watch the chicken closely to ensure it doesn't overcook.
